320 g of Carnaroli or Vialone Nano rice, 4 onions, 150 of g butter, 150 of g Parmesan, chicken stock, dry white wine, extra vergine olive oil, salt and pepper, balsamic vinegar of Modena.

400 g of rice, 100 g of green stoned olives, 50 g of black stoned olives, 1 small fennel, 1 stem of white celery, ½ hot pepper, 1 teaspoonful of anchovy paste, 2 spoonfuls of vinegar with fine herbs, 5 spoonfuls of oil, salt.
